Bruschetta

I made this Bruschetta for my roommates the other day.
I don't usually love tomatoes, despite their nutritional value but I somehow do like Bruschetta
This recipe turned out great! . I originally got this recipe from  the Pioneer Woman but modified it to taste :)


Ingredients 
2 Tablespoons Extra-Virgin Olive oil
5 cloves of garlic
Loaf of french bread (I chose wheat)
1 pint Cherry Tomatoes 
1 yellow pepper
Fresh Basil (lots)
Pepper
1 1/2  Tablespoons Balsamic Vinegar  
More olive oil
1/4 c. shredded mozzarella 


  1. Heat olive oil over medium-high heat, add in the garlic and stir so you lightly fry (about a minute). Then place in a bowl and allow the garlic/olive oil to cool. Set aside.
  2. Cut the cherry tomatoes into halves, then cut the yellow pepper into 1 inch pieces (I usually cut in half then continue to cut into halves again).
  3.  Add tomatoes, pepper, balsamic, basil, salt, pepper to the bowl with the Olive Oil and garlic. Toss and then add additional basil if necessary. 
  4. Cut the bread into diagonal slices to allow for the most surface area. Heat olive oil in a large skillet over medium-high heat. Grill the bread on both sides until they are a golden color. Repeat with all the slices. 
  5. Spoon mixture onto of the bread pieces. Sprinkle cheese over all of the pieces. Serve immediately.

Swedish Meatballs & Cranberry Sauce!

Both my family and Chad's family are Swedish so this recipe is fun because it encompasses both of our  heritages!

This is a delicious meal that takes quite a while... but if you are in the mood for some real home cooking, this recipe is the way to go :)

Cranberry Sauce

1 cup sugar
1 cup water
1- 12 oz package Ocean Spray Fresh Cranberries

  1. Combine sugar and water in a medium saucepan. Bring to boil.
  2. Add cranberries, return to boil.
  3. Reduce heat and boil gently for 10 minutes, stirring occasionally
  4. Cover and cool completely at room temperature
  5. Refrigerate until serving time

Swedish Meatballs

1 pound lean ground round
1/2 pound lean ground pork
3 pounds potatoes
1 medium onion
1 tablespoon salt
1 teaspoon ginger
1/4 teaspoon pepper

  1. Preheat oven to 350 degrees
  2. Peel potatoes and onions and put through a food grinder (or use a grater). Until they are shredded
  3. Mix seasonings with the meat, then add the shredded potatoes and onions. Mix well.
  4. Shape into patties about 3 inches in diameter and 1 inch think.
  5. Heat up greased frying pan on medium-high. Then start to lightly brown the patties. (About 2-3 minutes)
  6. Once browned, put into a layered roaster and bake for 1& 1/2 hours
  7. Serve with Cranberry Sauce

Lemon Mustard Chicken

Here is my favorite quick fix of chicken! This is especially good if you like your dishes a little spicy.

Lemon-Mustard Chicken

Boneless Chicken Breast (4-5 breast or 3 pounds)
2 Tablespoons Olive Oil
2 Tablespoons Dijon Mustard
Freshly squeezed lemon juice (1/2 a lemon)
1 teaspoon dried oregano
1 teaspoon dried basil 
2 teaspoons Cayenne pepper

1. Preheat oven to 350. Place chicken on a baking tray and cook for 25 minutes.
2. In a bowl mix oil, mustard, lemon, herbs, and cayenne. 
3. Once cooking time is completed take chicken out of the oven and brush mixture onto both sides.
4. Place frosted chicken breast into the oven for another 5-10 minutes or until chicken is cooked through.


* This recipe is also great grilled!
