I have finished officially finished all of my undergraduate responsibilities! I am so blessed to be done with this chapter of my life but will miss the life I created downtown, at North Central. But moving on, the weather finally feels spring-y in Minnesota! 

Things that make me say YAY about spring

FARMERS MARKETS



Today was my first farmer's market of 2012! I love going to these to markets because you get a little bit of fresh air, get great LOCAL/FRESH produce (a key to being healthy!), walk around (awhile eating cinnamon covered almonds of course), and support our local farmers. This is one of the biggest differences of the United States and Europe. In Europe they have markets everywhere- so they people naturally will walk and buy fresh produce. This allows for more movement in their daily schedule as well as preservative free food. 
Now that farmer markets trend is starting to spread here in the United State, I always try and go to get my produce in the summer months. It is an overall fun experience and if you are in the Minneapolis area there are TONS to choice from!





GARAGE SALE TIME
Tis the season for garage sales, thrifting, and finding local treasures :)

GARDEN
I get to start planting my garden so I will be producing some of my own local produce. This year I will be doing a couple varieties of herbs and vegetables. 


FLOWERS BLOOMING
Everything is blooming, growing, and transforming from it's dull winter state. IT makes for a beautiful time of year. Aside from all of my allergies that sprout...

OUTDOOR ACTIVITIES
In general you can move a lot more when the weather turns to spring. No more being stuck inside, now we get to go on walks, bike rides, and runs. I am 10 times more active in the summer (I also eat 10 times as much ice cream) but the weather really allows people to get back into shape. So take advantage of it!

Chocolate Chip Cranberry Bread

Here is a sweet treat!
Chocolate Chip Cranberry Bread.
It turned out so delicious. Defiantly going to be making this one again. 


Ingredients
1 cup raw sugar
1 tablespoon butter
1 cup applesauce unsweetened 
1 egg
1 teaspoon almond extract
1 cup whole wheat flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips
1/2 cup dried cranberries.

  1. Preheat the oven to 350. Combine all in ingredients in a bowl and mix well
  2. Grease bread loaf pan
  3. Pour in batter and cover it loosely with foil
  4. Bake for 30 minutes, remove the foil, then bake for another 20 minutes, or until a toothpick inserted in the middle comes out almost clean.
  5. Cool completely, then slice and serve

Best Cookies- Zebra

I seriously cannot get enough of cookies. Every week I am trying out a new recipe. But I cannot stop.
This recipe is my new favorite. I defiantly think that these are the best cookies I have made to date. Not super healthy, but life is not fun without desert!


ZEBRA CHOCOLATE CHIP COOKIES



Ingredients
1 cup butter
1 1/4 cups brown sugar
1/2 cup sugar
1 egg
1 egg yolk
1 tsp vanilla extract
2 cups flour
1 cup rolled oats
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. cinnamon 
1 cup white chocolate chips
1 cup milk chocolate chips

Directions
  1. Melt butter in a large sauce pan over medium heat. Once melted, turn off heat and add sugars, stirring constantly until smooth. Chill sugar mixture in fridge for 10 minutes.
  2. Remove mixture from fridge and stir in the gg, egg yolk, and vanilla. 
  3. Add flour, oats, baking soda, salt and cinnamon. Stir in chocolate chips
  4. Place in fridge for 20 minutes
  5. Preheat oven to 325.
  6. Scoop dough and roll into medium-size balls.
  7. Bake for 12-14 minutes.
